Not a whole lot goin' on

Oh ya'll, I so wish I had something fun and exciting to blog about but I just don't. Today was just a typical workday. A friend did come over tonight to do The 30 Day Shred and oh my word it's so much better doing it with a friend!

Now I'm just chilling with the Hubs watching The Biggest Loser and admiring my newly painted toenails. I just painted them with my new favorite polish. It's a nude color called Bryant Park by NYC. Super cheap and I LOVE it!

I know this is random but do any of you have any quick and easy supper recipes? Please note - I am a below average cook and don't really love doing it. I need to gain some confidence in the kitchen!

Normal days are just good sometimes! I love the bisquick chicken pot pie recipe- super easy and tasty... look it up on bisquick.com, it'll be easier than me typing it out :)

Zucchini Soup

1 lb Italian sausage cooked or Chicken (healthier option)
1 24 oz can whole tomatoes
1 16 oz can whole tomatoes (optional)
2 lbs zucchini, sliced ½”
1 cup celery, sliced ½”
1 lg. onion, sliced ½” pieces
1 lg. green pepper, sliced 1/2" pieces
1 or 2 Tbls Italian Seasoning mix
Dash of garlic salt to taste
1/2 cup of water

Sometimes I throw the onion in with the sausage to slightly cook it.
I prefer using ½ sweet and ½ hot Italian sausage.

Throw it all in the pot, put it on the stove on medium low and cook for 45 mins. Enjoy!! I love this soup!!

I do a quick broccoli bake...
You need about 2-3 cups of cooked rice (we eat rice a lot so I'm usually using the leftovers) I bag of frozen broccoli cooked. Put those in a big mixing pot and mix with one can of cream of mushroom soup, 1 cup of sour cream and a dash or two of soy sauce and mix. Put the mixture in a baking dish (I call them brownie dishes) with lots of graded cheddar cheese on top and bake for 20 mins. at 350 (then I usually broil the top because I like the cheese crispier.) DONE! It's yummy I've served it to guests and they've asked for the recipe!
