Mornin' Glory!

I know it's been a whole week since I've written and I do apologize to all of you who are on pins and needles every morning waiting to see what I have to say (that would be you, Mama), but it was just one of those weeks. Obviously, I had a week of a million and one exciting things going on and I was just too overwhelmed to write. OK, not really. I pretty much just worked like I do every week - I have no excuse.

I don't think I've mentioned this in a post before but I have recently started going to a Spinning class. Never in a million years would I have thought I would like it so much and actually look forward to going. It's kind of blowing my mind since I've spent the better part of my adult life looking for any excuse to just lay on the couch and watch TV.

Saturday morning I went to my first Spin Marathon. It was an hour and 45 minutes of pure exercise. I think I sweated more than I ever have in my life. I would love to be able to say that I glistened like a good Southern lady should but I was just one big sweaty, stinky mess. I LOVED IT!

Afterwards, the instructor treated us to some organic muffins she had made. Ya'll! They were so good. They weren't anything like a normal muffin. They were thick and somewhat chewy and hit the spot like nobody's business.

I'm sure like most of you, I find it really hard to find something for breakfast that I can eat on the go that will fill me up and be good for me. So when Cindy gave us the recipe for these glorious "Morning Glory" muffins and despite the fact that the recipe had 14 ingredients and I had to go buy 6 of them, I decided to try it. Since I am about as close to being a Cooking Queen as I am to being the Queen of England it took me a SUPER long time to find all the stuff at Target. If Jay hadn't been with me, I'm pretty sure I would have given up. But, we prevailed!

Since Hubby went dirt-bike riding this afternoon, I decided to try my hand at making something that has more than 5 ingredients. Check them out!

It really wasn't that hard to make them and they turned out pretty great. I wouldn't say as good as Cindy's but I'm not complaining.





It's quite possible that there just might be hope for me yet in the cooking arena!
